Happy New Year! I hope everyone enjoyed themselves and are looking forward to the year ahead.
Smoothies are so easy to throw together and this one is filling and very good for you. Just what is needed after the excesses of the Christmas and New Year festivities! It makes a perfect breakfast if you’re in a hurry, simply blend, pour into a flask and you have a healthy on-the-go breakfast.
You can use either fresh or frozen blueberries for this smoothies. I always have bags of frozen berries in the freezer as this time of year can be expensive to buy fresh berries and I go through a LOT of berries!
Ingredients
-1 cup blueberries, frozen or fresh
-1 banana, peeled
-2 large handfuls of shredded kale, washed & woody stalks removed
-1 cup almond milk, unsweetened
-1 tsp. Acai Berry powder – I used Organic Burst – (optional)
How To Make
Place all ingredients in to a blender and blend until desired consistency. If using berries straight from the freezer the smoothie will be quite thick, add more milk until you get the consistency you like.

May seem like a silly question but do you use raw kale? Or do you need to cook it first?
I use raw kale and just remove the woody. It surprisingly breaks down very well when blended in a smoothie!
