I know, I know, it’s another hummus recipe but I really had to share this one. If you like beetroot and hummus, well this is the recipe for you!
I must admit I’m slightly obsessed with hummus at the moment and have some everyday. This combination is becoming a firm favourite of mine just now. I think beetroot and walnut are fantastic together, I often have them on a salad together and love the earthy flavour they have.
When I first moved to the Middle East many years ago, everyone kept saying to me that I must try falafel. I wondered what on earth they were actually wanting me to try – visions of curried camel or roast camel swirled around my mind. Well thank goodness it was neither of those things; falafel is actually a ball or patty of chickpeas with seasonings and are deep-fried. And they are good. They are, so, so good!
Okay, so this wasn’t going to be my post this week but since I had somewhat of a kitchen disaster this weekend recipe testing I had to use a reliable, trusty recipe and first on my list was this juice!
I love fresh juices, my juicer is used daily and I love coming up with different flavour combinations. If I’m making a smoothie I sometimes use a fresh juice as the liquid in my smoothie rather than water or milk. A fresh juice is also ideal to make the night before, store it in the fridge and take it with you if you have an early start. Just add a slice of lemon or lime when juicing to keep help keep it from browning.
I love sweet potatoes. I love kale. So it will come as no surprise when I say I love this dish! This ‘hash’ was born one evening when I didn’t know what I wanted to eat, so as per my method of cooking, I threw a few things together and hey presto this dish was created.
