Pesto Turkey Burgers

It’s Summer which means its barbecue time!  And you can’t beat a good burger on a barbecue.

Unfortunately for me I don’t have a barbecue but these turkey burgers are super tasty oven baked – although I’m pretty sure they’d taste awesome done over some hot coals, so if anyone wants to pop over with their barbecue it would be greatly appreciated 🙂

Pesto Turkey Burger

Turkey can be a bit bland and boring so I’ve ‘jazzed’ up a standard turkey burger by adding some pesto.  I used homemade pesto as I nearly always have some in the refrigerator, but store bought would work well too.

These freeze well either cooked or uncooked, handy to make a batch and then freeze some for speedy dinners – although to be honest these burgers take no time to throw together.

Makes 4 large burgers

Ingredients

-500g minced turkey

-3 Tbsp. pesto, homemade or store bought

-1/2 small red onion, diced

-pinch of ground black pepper

How To Make

Pre-heat oven to 180C/355F.  Line a baking sheet with foil and lightly oil.

In a bowl mix all the ingredients together by hand and divide in to four.  Shape each portion in to a burger (make an indentation in the middle of the burger to prevent it ‘puffing’ up whilst cooking) and place on the baking sheet.  If freezing the burgers raw, place each burger on parchment paper then wrap in foil.

Place the burgers on the middle shelf in the oven and bake for 25-30 minutes flipping half way through until thoroughly cooked.

Serve straight away or allow to cool then place on parchment and wrap in foil to freeze.
