Everywhere you look these days people are talking about cauliflower ‘rice’. I’ve been making it for a while now so thought I’d share the recipe.
People probably wonder why not just use rice? Whilst most people can tolerate rice there are others who can’t seem to digest rice too well and this makes a nice alternative and it is so easy to make which always helps!
I’ve used cauliflower rice as a side to curries, vegetable chilli and I’ve also used it in a stir fry all of which worked really well.
In this recipe I’ve given two options on how to cook the ‘rice’.
Serves 2-3 as a side dish
Ingredients
-1 medium head of cauliflower, florets removed
-1/2 cup water
-salt & pepper to taste
-handful or fresh herbs (optional)
How To Make
Place the florets in a food processor and pulse until a rice consistency is achieved.
Place a large frying pan over a medium heat and add the ‘rice’, stirring continuously so it doesn’t brown. After 2 to 3 minutes add the water and continue to stir until the water has evaporated.
Add salt and pepper to taste and add the fresh herbs, if using.
Serve immediately.
Alternatively you can cook the ‘rice’ in the microwave.
Once the cauliflower has been pulsed, put the rice in a microwavable container with 2 tablespoons of water, cover and cook for 2-3 minutes until the ‘rice’ is cooked.
Season and add the herbs, if using.
