Okay, so this wasn’t going to be my post this week but since I had somewhat of a kitchen disaster this weekend recipe testing I had to use a reliable, trusty recipe and first on my list was this juice!
I love fresh juices, my juicer is used daily and I love coming up with different flavour combinations. If I’m making a smoothie I sometimes use a fresh juice as the liquid in my smoothie rather than water or milk. A fresh juice is also ideal to make the night before, store it in the fridge and take it with you if you have an early start. Just add a slice of lemon or lime when juicing to keep help keep it from browning.
I think beetroots are often overlooked. People often associate beetroot with the pickled, crinkle cut variety that make an outing at the Summer barbeque! I’m not a fan of pickled variety but I love raw or roasted beetroot. They have a lovely earthy yet sweet flavour and complement the orange and carrot in this juice well.
Depending on which brand of juicer you have depends on if you peel your fruit and veg. I tend to peel most things but for oranges I only take the skin off and leave the white pith as this is where the good stuff is!
Juices and smoothies are so easy to throw together with very minimal effort but with all the nutritional goodness in a glass! What more could you want!
-1 small or 1/2 large beetroot, peeled
-2 carrots, peeled or scrubbed if organic
-2 oranges, peeled but keep pith on
-1 inch piece of ginger (optional)
How To Make
Place all the ingredients in the tube of your juicer – it’s best to ‘sandwich’ the oranges and ginger between the carrots and beetroot.
There seems to be something of a juicing phenomenon occurring just now. Or maybe it’s always been around and I’m only noticing it more now since I have a juicer! I was given my juicer for my birthday last year and lets just say it is really well used! I have at least one fresh juice a day and the fun part is trying out different fruits and vegetables, some combinations have been a success whilst others haven’t!

Smoothies are so easy to throw together and this one is filling and very good for you. Just what is needed after the excesses of the Christmas and New Year festivities! It makes a perfect breakfast if you’re in a hurry, simply blend, pour into a flask and you have a healthy on-the-go breakfast.
You can use either fresh or frozen blueberries for this smoothies. I always have bags of frozen berries in the freezer as this time of year can be expensive to buy fresh berries and I go through a LOT of berries!
-1 cup blueberries, frozen or fresh
-1 banana, peeled
-2 large handfuls of shredded kale, washed & woody stalks removed
-1 cup almond milk, unsweetened
-1 tsp. Acai Berry powder – I used Organic Burst – (optional)
How To Make
Place all ingredients in to a blender and blend until desired consistency. If using berries straight from the freezer the smoothie will be quite thick, add more milk until you get the consistency you like.
I love this juice. It’s especially good just now during this heat wave we are experiencing in the UK…not that I’m complaining about the sunshine, I love it!
This juice is super quick to make and lovely and refreshing. It’s full of goodness and the ginger adds a wee zing.
-1 stick of celery
-A quarter cucumber
-2 large handfuls baby spinach
-1 tbsp. fresh ginger – add more or less to suit your taste. I like just a subtle kick of ginger, not the burn the mouth amount!
Throw all the ingredients into your juicer and juice. Serve over ice.
